“Flaona”, or “Flaona de Santa Pau”, is a cream-filled pastry in the shape of a half-moon. It is mostly made around the time of the village festivals in the Empordà region. It is made from flour, sugar, milk, eggs, lemon and cinnamon. The name “flaona” first appeared in 1279 in the Palamós town charter as a baked delicacy. They are similar to the “pastissets de Tortosa”, although these are filled with a pumpkin jam called “cabell d’àngel”.
