A very traditional Christmas biscuit in Belgium and the Netherlands. They are typical in Christmas markets and usually have Christmas designs related to St. Nicholas. It comes from the Latin “speculum”, meaning “mirror”, and refers to “he who sees all”, which is Saint Nicholas’ nickname. These biscuits are made from cinnamon, nutmeg, cloves, powdered ginger, cardamom and white pepper.
