A “tompouce” is a typical cake from the Netherlands, similar to a mille-feuille. It has two rectangular layers of puff pastry filled with cream. It is normally covered in pink or orange cream. Its origins are believed to lie in the visit of an American circus to Amsterdam in 1845. One of the stars of the circus was a dwarf named Charles Sherwood Stratton, also known as General Tom Thumb or “Tom Pouce”. The baker was so impressed by Tom’s show that he named his new cake after him.
