Very traditional Christmas cookie in Belgium and the Netherlands. They are typical at Christmas markets and usually have Christmas motifs related to Nicholas of Bari. It comes from the Latin speculum meaning “mirror” to refer to “the one who sees everything”, which is the nickname of St. Nicholas. These cookies have cinnamon, nutmeg, cloves, powdered ginger, cardamom and white pepper.
