A tompouce is a typical Dutch pastry similar to a mille-feuille. It has two rectangular sheets of puff pastry filled with plenty of cream. It is usually covered with a pink or orange cream. It is believed that its origin is due to a visit in 1845 in Amsterdam, of an American circus where one of the main artists was a dwarf named Charles Sherwood Stratton, known as General Tom Pouce. The baker was so impressed with Tom Pouce’s show that he borrowed the name for his new cake.
